Zucchini Fritters

Zucchini Fritters
Makes 2-3 servings
Ingredients
- 1 medium zucchini
- 1 small carrot grated
- 1 egg, lightly beaten
- 4 tbsp plain flour (sub with 6 tbsp almond meal if keto)
- 1 tsp of thyme, chopped
- 1 tsp sesame seeds
- 1/4 cup spring onions,chopped
- 80g grated cheddar/ tasty cheese
- 1/4 tsp chicken powder or salt
- 1/2 tsp salt
- 2-3 tbsp of oil
Instructions
- Grate zucchini and carrot, add salt and mix well. Let sit for 10 mins
- Squeeze the grated vegetables a few times until it feels dry
- Place remaining ingredients (except for oil) in a bowl and mix well
- Heat frying pan on medium heat, add 1tbsp of oil, scoop 3 tbsp of mixture onto pan and flatten slightly with spatula
- Cook for 3mins per side until brown then flip to other side.
- Repeat steps 4 and 5 until mixture is finished
- Serve with lemon wedges, yoghurt or sour cream
