Zucchini Fritters

Makes 2-3 servings


  • 1 medium zucchini
  • 1 small carrot grated
  • 1 egg, lightly beaten
  • 4 tbsp plain flour (sub with 6 tbsp almond meal if keto)
  • 1 tsp of thyme, chopped
  • 1 tsp sesame seeds
  • 1/4 cup spring onions,chopped
  • 80g grated cheddar/ tasty cheese
  • 1/4 tsp chicken powder or salt
  • 1/2 tsp salt
  • 2-3 tbsp of oil


  1. Grate zucchini and carrot, add salt and mix well. Let sit for 10 mins
  2. Squeeze the grated vegetables a few times until it feels dry
  3. Place remaining ingredients (except for oil) in a bowl and mix well
  4. Heat frying pan on medium heat, add 1tbsp of oil, scoop 3 tbsp of mixture onto pan and flatten slightly with spatula
  5. Cook for 3mins per side until brown then flip to other side.
  6. Repeat steps 4 and 5 until mixture is finished
  7. Serve with lemon wedges, yoghurt or sour cream
