Soy and chutney glazed Pork Cutlets

Soy and chutney glazed pork cutlets with kale and apple salad
Supposed to serve 2. It really depends on the size of your pork cutlets….
Ingredients
- 4 pork cutlets
- 3 tbsp chutney (try F Whitlock & Sons peach mango and apricot chutney – huge fan, not sponsored)
- 3 tsp soy
- 3 tsp water
- 1 whole garlic clove
- 1 tsp vegetable oil
- Salt and pepper
- 3 stalks of kale, torn int small pieces
- Handful of chopped almonds
- Half an apple, cut into matchsticks
Instructions
- Marinade pork cutlets with salt and pepper and oil for at least an hour to overnight
- Mix wet ingredients and garlic clove amd microwave for 30 seconds
- Sear pork cutlets in well heated pan (medium heat) for 4 mins on each side
- Brush glaze onto pork cutlet and cook for further 30 seconds on each side
- Leave pork to rest for 5 minutes
- Mix remaining marinade with kale, apple and almonds
- Serve with more chutney on the side 😊
