Chunky Vegetable Soup

I also call this the “everything but the kitchen sink” soup

Serves 4.
Ingredients
- 2 medium sized zucchini
- 2 carrot
- 1 tomato
- 1 potato, peeled
- 1 large brown or white onion
- 3 cloves garlic
- 1 leek
- 3 tbsp olive oil
- 800ml chicken/ vegetable stock
- salt and pepper to taste
Optional - 1 – 2 tsp thyme/ oregano or Ras El Hanout (North African spice mix)
- Celery, sweet potato, parsnip, pumpkin. Basically whatever vegetable you have in your fridge
Method
- Finely dice the onion
- Thinly slice the leek, discarding the green tops
- Roughly chop the garlic and tomato
- Chop zucchini, potato and carrot into large chunks
- Heat a large saucepan and add the olive oil
- When pan is hot, add onions and leek and saute for 10-15mins till soft
- Add garlic and fry for 2-3 mins
- Add all remaining vegetables and stock, ensuring the vegetables are covered (if not add more water) and simmer on medium heat for 1 hr
- Use a potato masher and mash the vegetables in the pot when done
- Add salt and pepper to taste
