Chunky Vegetable Soup

I also call this the “everything but the kitchen sink” soup

Serves 4.


  • 2 medium sized zucchini
  • 2 carrot
  • 1 tomato
  • 1 potato, peeled
  • 1 large brown or white onion
  • 3 cloves garlic
  • 1 leek
  • 3 tbsp olive oil
  • 800ml chicken/ vegetable stock
  • salt and pepper to taste

  • 1 – 2 tsp thyme/ oregano or Ras El Hanout (North African spice mix)
  • Celery, sweet potato, parsnip, pumpkin. Basically whatever vegetable you have in your fridge


  1. Finely dice the onion
  2. Thinly slice the leek, discarding the green tops
  3. Roughly chop the garlic and tomato
  4. Chop zucchini, potato and carrot into large chunks
  5. Heat a large saucepan and add the olive oil
  6. When pan is hot, add onions and leek and saute for 10-15mins till soft
  7. Add garlic and fry for 2-3 mins
  8. Add all remaining vegetables and stock, ensuring the vegetables are covered (if not add more water) and simmer on medium heat for 1 hr
  9. Use a potato masher and mash the vegetables in the pot when done
  10. Add salt and pepper to taste
