Mango Panna Cotta

Ingredients
Makes 3 large glasses
Mango Jelly
This layer must be set before you prepare and pour the panna cotta layer
- 1 large Mango (I extracted 350ml of puree from 1 Honey Gold Mango)
- 60g sugar
- 4 tbsp water
- 3 gelatin leaves or 1.5 tsp gelatin powder
Panna Cotta (the creamy jelly)
- 150ml thickened cream
- 250ml full cream milk
- 40g sugar
- 3 gelatin leaves or 1.5 tsp gelatin powder
- 1tsp vanilla extract (optional)
- 3 cardamon, crushed (optional – boil with milk and gelatin to extract the flavour, then strain it through a sieve to filter out the seeds after boiling)
Note: This is a soft Panna Cotta recipe. If you want a firmer Panna Cotta or if you want to un-mould it before serving, add an extra 1/2 tsp of gelatin or 1 extra sheet of gelatin leaf to both the mango jelly and Panna Cotta Mixture.
Method
- Remove flesh from mango and puree with a stick blender
- Mix 4 tbsp water and 50 ml of mango puree in a pot and soak gelatin powder (sprinkle over the liquid and mix well) or gelatin leaves for 10 minutes
- Gently heat mango mixture in pot until gelatin powder or leaves have dissolved
- Add sugar and stir until dissolved
- Add hot mixture to remaining mango puree and mix well
- Spoon mixture into a glass and chill for at least 2 hrs before pouring the panna cotta layer over (else you will end up with a mango milk shake). If you want the mixture to set at an angle in the glass, place the glass in a muffin tin and tilt it (place a towel under the glass to prevent it from spinning), then pour the mixture in. I poured the mixture from a glass bottle with a long neck to avoid splashing the rest of the glass.
- After 2 hours, while mango puree is chilling, prepare Panna Cotta by soaking gelatin powder or leaves in milk for 10 mins
- Gently heat milk until gelatin powder or leaves have dissolved. Do not boil.
- Add sugar and stir until dissolved, then pour in remaining cream and mix well
- Pour into glasses (remove glasses from muffin tin if you have used them) and chill for another 2 hours
- Serve with mango pieces or berries
