Oyster Mushrooms in Brown Butter

The best way to entice me to eat vegetables is to add butter.

Ingredients
- 250g oyster mushrooms (or any mild tasting mushroom)
- 3 tbsp butter
- 1 garlic clove, finely minced
- handful of Italian parsley, finely chopped
- salt and pepper to taste
Method
- Tear the large chunks of oyster mushroom into smaller pieces. Leave the smaller pieces as they are
- Heat a non stick pan on medium-high heat
- Add half the mushrooms and dry fry for 2 mins, turning occasionally. You’d want the mushrooms to char/ brown a little so do not add all the mushrooms at once else they will stew and not brown
- Remove first batch of mushrooms from pan and repeat with second batch
- Remove mushrooms from pan
- Add the butter and let it brown slightly
- Add chopped garlic and when garlic is browed, add all the mushrooms and gently stir for 30 seconds.
- Add parsley and salt/ pepper and stir through
- Serve with buttered rice
