Oyster Mushrooms in Brown Butter

The best way to entice me to eat vegetables is to add butter.

Serves 2


  • 250g oyster mushrooms (or any mild tasting mushroom)
  • 3 tbsp butter
  • 1 garlic clove, finely minced
  • handful of Italian parsley, finely chopped
  • salt and pepper to taste


  1. Tear the large chunks of oyster mushroom into smaller pieces. Leave the smaller pieces as they are
  2. Heat a non stick pan on medium-high heat
  3. Add half the mushrooms and dry fry for 2 mins, turning occasionally. You’d want the mushrooms to char/ brown a little so do not add all the mushrooms at once else they will stew and not brown
  4. Remove first batch of mushrooms from pan and repeat with second batch
  5. Remove mushrooms from pan
  6. Add the butter and let it brown slightly
  7. Add chopped garlic and when garlic is browed, add all the mushrooms and gently stir for 30 seconds.
  8. Add parsley and salt/ pepper and stir through
  9. Serve with buttered rice
